INGREDIENTS

12 oz (about 12) portabella mushrooms (small, baby bella-sized)

1/3 cup low-sodium, fat-free broth, chicken or vegetable

1/2 cup (about 1 small) yellow onion, diced

1/4 cup oil-free sun-dried tomatoes, finely diced

2 tsp (about 2 cloves) garlic, minced

2 oz (about 2 cups) baby spinach, torn into pieces

1/2 cup fat-free feta cheese, crumbled

1/3 cup plain panko breadcrumbs (no fat added)

DIRECTIONS

Preheat oven: Preheat oven to 350°F.

Prep mushrooms: Remove stems from mushrooms. Set aside caps. Dice stems.

Heat broth: In a medium skillet, add chicken or vegetable broth. Heat over medium-low heat.

Cook vegetables: Add onion, diced mushroom stems, and sun-dried tomatoes. Cook, stirring occasionally, until tender, about 4 min.

Add garlic and spinach: Stir in garlic and spinach. Cook until spinach is wilted, about 1–2 min. Spinach will cook down to about 1/3 of its original amount.

Mix filling: Remove skillet from heat. Add feta cheese and breadcrumbs. Stir until evenly combined.

Stuff mushrooms and bake: Spoon mixture into opening of mushroom caps (where the stem used to be). Place cap on a baking sheet with filling facing up. Bake for about 15 min, until filling is lightly golden.

Drain liquid and serve: Mushrooms may release liquid. If so, gently dab with a paper towel to remove excess moisture. Then place on a plate and serve hot.

TIPS

For extra flavor without adding fat, sprinkle a tiny pinch of dried herbs like oregano or thyme on top of the stuffed mushrooms before baking.

Don’t want to mince garlic all the time? Consider buying a jar of minced garlic and substituting 1 tsp for each garlic clove in your recipes.
