INGREDIENTS

1 1/2 cup frozen chopped spinach (no salt added), thawed and squeezed dry

1/2 cup liquid egg whites (or 4 large egg whites)

2 cups nonfat cottage cheese

2 cups fat-free shredded cheddar cheese

1/4 cup whole wheat flour

1/4 tsp garlic powder

1/8 tsp ground black pepper

DIRECTIONS

Preheat oven: Preheat oven to 350°F.

Combine ingredients: In a large mixing bowl, combine spinach, egg whites, nonfat cottage cheese, fat-free cheddar cheese, flour, garlic powder, and black pepper. Mix until evenly incorporated.

Prepare pan: Line an 8×8-inch baking pan with parchment paper.

Bake: Spread mixture evenly in the prepared pan. Bake for 35–45 min, until a knife inserted in the center comes out clean.

Cool and serve: Let cool for 10 min. Run a sharp knife between outer edges and pan. Slice into 6 servings and serve.
