Sweet Potato (UN)FRIES

INGREDIENTS

2 medium sweet potatoes

2 sec spray PAM Original Cooking Spray

1 tsp onion powder

3/4 tsp garlic powder

1/2 tsp chili powder

1/2 tsp paprika

1/2 tsp salt

1/8 tsp cayenne pepper (optional)

DIRECTIONS

Prepare oven and pan: Set oven to 450°F. Place a wire rack atop a large baking sheet (preferred) or line a large baking sheet with non-stick aluminum foil.

Prepare potatoes: Cut potatoes into 1/2" “steak fry” shape. Optional for crispier (un)fries: Place in a large bowl and cover with cold water. Soak for 30 min to reduce starch and help your (un)fries turn crispier. Remove (un)fries from water and pat dry with a kitchen or paper towel.

Coat with PAM: Place (un)fries into large mixing bowl. Lightly coat potatoes with 2-second spray of PAM Original. Gently mix to coat evenly.

Initial bake: Spread (un)fries onto prepared baking sheet (on rack or foil) in a single layer with space between pieces for even, crisp cooking. Place baking sheet in oven. Bake 10–15 min.

Prepare seasoning: In small bowl, mix onion powder, garlic powder, chili powder, paprika, salt, and cayenne pepper.

Turn potatoes and season: Use a spatula to flip each piece for even cooking. Sprinkle seasoning evenly over potatoes.

Finish baking and serve: Return to oven and bake additional 10 min until browned and tender inside. Serve hot.

TIPS

Yams can be used in place of sweet potatoes, but may have different nutrition values.
