ROASTED BRUSSELS SPROUTS with Cranberries
INGREDIENTS
4 cups (about 1 pound) Brussels sprouts
1/4 cup low-sodium, fat-free broth, chicken or vegetable
1/2 tsp garlic powder
1/4 tsp salt
1/8 tsp ground black pepper
1/4 cup dried cranberries
DIRECTIONS
Preheat oven: Preheat oven to 375°F.
Prepare baking sheet: Line a large baking sheet with parchment paper to prevent sticking and help browning.
Prep Brussels sprouts: On a cutting board, trim ends of Brussels sprouts with a knife. Remove any damaged outer leaves. Cut each sprout in half, lengthwise from stem to top.
Season and coat: In a large mixing bowl, combine Brussels sprouts with broth, garlic powder, salt, and pepper. Toss until evenly coated.
Roast: Spread sprouts in a single layer on the parchment-lined baking sheet with cut side facing down. Place in oven. Roast for 25–30 min, until browned and tender, with edges that look slightly crispy.
Add cranberries: Remove from oven. Immediately sprinkle dried cranberries over the top and serve.
TIPS
Dried cranberries contain varying levels of added sugar, which may increase blood sugar levels.
