INGREDIENTS

3 cups canned peaches in heavy syrup, drained and sliced

1/3 cup brown sugar substitute

1 sec spray PAM Original Cooking Spray

1 cup Kodiak Power Cakes, Flapjack and Waffle Mix, Buttermilk

1/2 cup old-fashioned oats

1 cup Truvia Sweet Complete Granulated Stevia (1:1 sugar replacement)

1/2 tsp ground cinnamon

4 tbsp liquid egg whites (or 2 large egg whites)

2 tbsp water

DIRECTIONS

Preheat oven: Set oven to 350°F.

Prepare peaches: In small mixing bowl, combine peaches and brown sugar substitute. Stir until evenly coated.

Prepare baking dish: Lightly coat 8" x 8" glass baking dish with 1-second spray of PAM Original.

Add peach layer: Transfer peach mixture into prepared baking dish. Spread into even layer.

Mix dry topping: In medium mixing bowl, combine Kodiak® mix, oats, granulated sugar substitute, and cinnamon. Stir well.

Add egg mixture: In small bowl, beat egg whites and water with fork until slightly foamy. Add to dry mixture. Stir until combined; mixture will remain crumbly and dry.

Assemble: Sprinkle topping evenly over peaches.

Bake: Place dish in oven and bake for 45–50 min, until top is lightly browned and peaches are bubbling.

Cool and serve: Remove from oven and let cool for 10–15 min before cutting into 9 equal servings and plating one per person.

Store leftovers: Cover and refrigerate. Reheat in microwave until warm; topping will soften.

TIPS

This recipe does contain fat, natural sugars, and carbs, so one serving is enough. Also, its sweetness may also reinforce sugar cravings if managing diabetes.

For more even texture, press topping down very lightly with back of spoon before baking. This helps it form a cohesive crust without adding fat.
