INGREDIENTS
1-second spray PAM Original Cooking Spray
1 cup (about 1 large) Honeycrisp apple with skin, cored and sliced
2 tbsp liquid egg whites (or 1 large egg white)
1/2 cup whole wheat flour
1 cup fat-free refried beans
2 tbsp applesauce, unsweetened
1 tsp alcohol-free imitation vanilla extract
1/2 tsp baking soda
1/8 tsp ground cloves
1 tsp ground cinnamon
4 tbsp raisins
DIRECTIONS
Preheat oven: Preheat oven to 375°F. Lightly coat an 8 in x 8 in glass baking dish with a 1-second spray of PAM Original.
Prepare the apple: Add the cored apple to a food processor. Blend until finely minced (very small pieces, not liquid). Transfer to a small bowl and set aside.
Mix batter: Add liquid egg whites, whole wheat flour, refried beans, applesauce, vanilla extract, baking soda, cloves, and cinnamon to food processor. Blend until smooth (no visible lumps). Batter will be thick.
Add fruit: Transfer batter to a large mixing bowl. Stir in minced apple and raisins using a spoon until evenly combined.
Spread in pan: Pour batter into prepared baking dish. Use a spoon or spatula to spread it evenly.
Bake: Place dish in oven. Bake for 40–50 min, or until a knife inserted in center comes out clean, with no wet batter stuck to it.
Cool and serve: Let cool in pan for at least 10 min before cutting into 9 squares and serving.
TIPS
Apples and raisins contain natural sugars, which can raise blood sugar, especially when having more than one serving.
Squeezing 1/4 of a lemon over the minced apples will help prevent them from browning.
