Bread PUDDING
INGREDIENTS
1 second spray PAM Original cooking spray
4 slices whole wheat bread
1 cup (8 oz can) pineapple in its own juice (drain some juice), crushed
1/2 cup Truvia Sweet Complete Granulated Stevia (1:1 sugar replacement)
1 cup liquid egg whites (or 8 large egg whites)
1/2 cup nonfat milk
1/2 tsp alcohol-free imitation vanilla extract
1/2 tsp salt
1/8 tsp ground cinnamon
DIRECTIONS
Preheat oven: Preheat oven to 350°F. Lightly coat an 8×8-inch shallow baking dish with 1-second spray of PAM Original.
Prepare bread: Break bread into small pieces by hand. Place evenly in baking dish.
Mix wet ingredients: In a mixing bowl, combine pineapple, sugar substitute, nonfat milk, egg whites, vanilla, and salt. Stir until well combined.
Assemble pudding: Pour mixture over bread pieces. Sprinkle top with cinnamon. Let bread soak up liquid for 5 min.
Bake: Bake for 35–45 min, until set. A knife inserted in the center should come out clean.
Serve: Cut into 6 equal-size portions and serve.
TIPS
For a slightly softer texture, cover the dish with foil for the first 20 min of baking, then uncover to brown the top.
If you prefer, substitute a cup of mashed banana for the pineapple. This may change the estimated nutrition per serving.
