Blueberry PANCAKES

INGREDIENTS

1 cup Kodiak Power Cakes, Flapjack and Waffle Mix, Buttermilk

3/4 cup water

1 sec spray PAM Original Cooking Spray

1/2 cup fresh blueberries

3 tbsp sugar-free syrup (optional topping)

DIRECTIONS

Mix batter: In medium mixing bowl, combine Kodiak® mix and water. Stir until just combined; batter should be slightly lumpy. Do not overmix.

Preheat pan: Heat nonstick skillet or griddle over medium-high heat for 2–3 min.

Apply cooking spray: Reduce heat to medium. Lightly coat pan with 1-second spray of PAM Original.

Portion batter: Pour batter onto pan in 6 equal rounds, about 2–3 tbsp each. Leave space between each. Sprinkle blueberries into batter (optional).

Cook first side: Cook until bubbles form on surface and edges look set, about 2–3 min.

Flip and finish: Flip pancakes with spatula. Cook additional 1–2 min until golden brown and cooked through.

Serve: Transfer 2 pancakes per plate. Top with sugar-free syrup, if desired.

TIPS

This recipe does contain fat, natural sugars, and carbs, so remember, only 2 per serving! Also, its sweetness may also reinforce sugar cravings if managing diabetes.

If you substitute blueberries for your fruit choice or use sugar-free jam instead of syrup, it may change nutrition values.

If pancakes brown too quickly before cooking through, reduce heat slightly. This ensures inside cooks fully without burning outside.
