INGREDIENTS

1 (15 oz) can black beans, drained and rinsed

1 (15 oz) can light red kidney beans, drained and rinsed

1 (15 oz) can cannellini beans, drained and rinsed

1/2 cup (about 1/2 a medium) red onion, minced

1 cup celery, chopped

1/4 cup fresh parsley, chopped

1 tsp dried basil

1/2 tsp dried oregano

1/2 tsp dried thyme

1/4 tsp garlic powder

1/4 tsp onion powder

1/2 cup apple cider vinegar

2 tbsp Truvia Sweet Complete Granulated Stevia (1:1 sugar replacement)

1 tsp salt

1/2 tsp ground black pepper

DIRECTIONS

Mix dressing: In large mixing bowl, add apple cider vinegar, sweetener, salt, and black pepper. Stir until sweetener fully dissolves.

Combine bean mixture: Add beans, red onion, celery, parsley, basil, oregano, thyme, garlic powder, and onion powder to dressing. Stir gently to combine.

Combine and coat: Pour dressing over bean mixture. Stir thoroughly until all ingredients are evenly coated.

Chill and marinate: Cover bowl. Place it in refrigerator for at least 4 hours or overnight. This allows the flavors to develop.

Serve: Spoon a half-cup serving onto a plate or bowl and eat cold.

TIPS

If the flavor tastes too sharp after chilling, stir in 1–2 tbsp cold water just before serving to slightly dilute the acidity without adding fat or sugar.

If overall salt intake is a concern, look for beans with no salt added.

You can make this recipe with a few variations: premade Italian seasoning mix instead of the dried herbs; different beans, like garbanzos; or your preferred sugar substitute. These changes may affect nutritional values.
