INGREDIENTS

4 lbs turkey breast, skin removed

1 tbsp dried rosemary, chopped

1 tbsp dried thyme

2 tsp yellow mustard

2 tsp (about 2 cloves) garlic, minced

2 tbsp low-sodium, fat-free broth, chicken

2 tbsp lemon juice

2 tsp salt

1 tsp ground black pepper

DIRECTIONS

Preheat oven: Preheat oven to 325°F.

Make herb paste: In a small bowl, combine chicken broth, rosemary, thyme, mustard, garlic, lemon juice, salt, and pepper to form a paste.

Rub turkey: Spread the paste evenly over the skinless turkey breast.

Optional marinate: Cover and refrigerate overnight to enhance flavor (optional).

Roast turkey: Place turkey in a roasting pan. Bake until a meat thermometer inserted into the thickest part reads 165°F.

Rest turkey: Remove from oven and place turkey on cutting board. Cover loosely with foil. Let rest 10 min so juices distribute throughout the meat.

Serve: Slice and serve warm.

TIPS

Using lean turkey helps minimize fat, but this dish should be consumed in small portions. People with high triglycerides, FCS, and other lipid conditions should monitor total daily fat intake.

Don’t want to mince garlic all the time? Consider buying a jar of minced garlic and substituting 1 tsp for each garlic clove in your recipes.
